Typical dishes of Cusco

In Cusco, as in the other regions of Peru, you can taste various typical dishes from each region, each with its own recognition, as well as its customs.

Chiriuchu. It is a typical dish of Cusco, served during the patron saint festivities of the city of Cusco. In Spanish it means “Spicy Cold”, this name is due to the fact that the dish is eaten cold. The ingredients of Chiriuchu are: toasted corn (produced in the Sacred Valley of the Incas ), cheese, rocoto, seaweed, beef jerky, cooked chicken, corn tortilla.

Pork crackling– is another typical dish from Cusco, native to the district of Saylla, where you can enjoy delicious fried pork accompanied with mote, French fries, onion and mint salad, and if it doesn’t come with “Uchucuta” or ground chili, don’t miss it.

Now to kill the pig, a typical phrase from Cusco, with a glass of aniseed you will be satisfied.

Merienda. – Snack is a dish served with spicy mullet and spicy broad beans or “Kaqchi de habas”, accompanied by a corn tortilla and baked guinea pig. This delicious dish is typical of the province of Paucartambo and you can also find it in typical Cusco restaurants such as Cusqueñita and Emiliana.

Oven Baked Guinea Pig. – Many countries are unaware of the preparation of this dish, since some have them as pets and others compare them to rodents, but if you are one of those who like to try and have the pleasure of savoring Peruvian cuisine, we are sure that you will love it.

The baked guinea pig comes with baked noodles, Maqtillo potatoes (sandy potatoes from the mountains), and its essential “Uchucuta” (ground chili pepper)

Bean bachelor. – The habas solterito is a cold food preparation, or rather, one could say that it is a cooked vegetable salad, you can find it in some restaurants in Cusco or in the traditional market of Cusco , San Pedro,

The ingredients of this typical Cusco dish are: cooked beans, cooked carrots, chopped tomatoes and onions, cheese, seaweed, and accompanied by the sandy potato called Maqtillo.

Second course of Tarwi. This dish is typical of the high Andean areas, and is prepared based on soaked and ground tarwi accompanied by a portion of rice. This meal is generally heavy, so it is not recommended to eat it at night.

Lisas Uchu or Spicy Lisas.  If you don’t try this dish you don’t know Cusco . The Lisas or “Olluco” is a legume native to the high Andean areas of the city of Cusco, which is the main ingredient of this typical dish, accompanied by Cecina de Carne and a portion of rice.

In this regard, we can also consider that the drink that accompanies each of these typical dishes is Chicha de Jora or Frutillada.

Chicha de Jora is prepared with corn soaked in water, called Jora, which is ground and boiled and then left to ferment so it has the sweet and sour flavor it has.

Chicha was the most important drink of the Incas, which they also made for their offering ceremonies to the god Inti “sun” and all the Apus.

But don’t forget to have a glass of Aniseed, which is recommended when you enjoy a delicious suckling pig or Chicharon de Cerdo.
